Hearty Soup For Dinner

This is another soup that my family loves, it is loaded with Kale, bacon, potatoes and hot and spicy sausages. It is very easy to prepare and satisfying. The spiciness of the sausages just give an extra oomph to the soup. My family always goes for second serving hence I always make one big pot to satisfy their appetite. This recipe is about 8 big servings.


  • 1 big bunch kinky Kale (leaves only)
  • 200 ml cooking cream
  • 3L Chicken Broth
  • 300g bacon chopped to 2 inches size
  • 1 pack hot and spicy sausage (6 pcs) chopped( I used Johnsonville Brand)
  • 4 medium size potatoes (cube)
  • 1 1/2 medium size yellow onion (chopped)
  • 1 minced garlic bulb


  • In medium high heat, cook the bacon until crisp using your pot or dutch oven, no need to add oil. Let the fat from bacon render out. Set aside the bacon. Leave only about 2 tablespoon of oil from the bacon
  • Add the sausages, cook for about 5 minutes, add in the garlic and yellow onion, cook until the onion is translucent. Stir the pot constantly.
  • Add the broth, followed by the potatoes
  • Bring the soup to boil, continue cooking for about 20 minutes, or until the potatoes are soft.
  • Add the bacon, followed by the kale. Cook until the kale softens.
  • Lower the heat, add the cream, and let it simmer for another 5 minutes.
  • Serve the soup on a bowl, topped with some crispy bacon.

Crayfish Mac and Cheese

I love everything seafood – crabs, shrimps, clams and the such. I also love Mac and Cheese which is one of my staple comfort foods. So I thought, why not combine both? Introducing, Crayfish Mac and Cheese! Now I can satisfy both my cravings at the same time! Nom Nom Nom!


  • 200g macaroni
  • 45g + 20g Butter
  • 40g All Purpose Flour
  • 600g Milk
  • 5g Salt
  • 5g Ground Pepper
  • 250g grated cheddar
  • 50g Parmesan
  • 15g Sugar
  • 40g bread crumbs
  • 15 pcs medium size crayfish ( you may add more if you like)


  • Preheat Oven to 180 degree celsius
  • Boil the macaroni as per instruction on the package, drained and set aside
  • Boil the crayfish until it turned orange/red. Separate the meat from the shell, and cut it into chunks. Set aside
  • Melt 40g butter in a sauce pan, add in the flour, and whisk to combine, add in the milk, and whisk thoroughly until no visible lumps. Add salt, pepper and sugar
  • Add in the Parmesan and Cheddar. Stir until the cheese melted and sauce thickens
  • Turn off the heat and add in the cooked macaroni and crayfish, stir to combine ensuring all the nooks and crannies of the pasta is getting the sauce. Serve it on a pasta dish.
  • Prepare the topping by melting the 20g of butter on a pan, stir in all the bread crumbs, and toast it for about a minute on medium heat while continue stirring it.
  • Sprinkle all the toasted bread crumbs on the top of the pasta, bake it for about 15-20 minutes or until the top is slightly browned
